Shepherd's pie is a great comfort food but is filled with calories and carbs by using mashed potatoes and beef. With this lightened shepherd's pie, I replaced the mashed potatoes with mashed cauliflower and used lean ground turkey to replace the ground beef. With the same amazing texture, you won't even be able to tell the difference!
Start off my making your mashed cauliflower (see recipe here) and set aside. Then, start sauteing your chopped carrots and celery. After about 10 minutes, add in your chopped onion and minced garlic and stir for about 5 more minutes. Next, add in your lean ground turkey and cook until browned. Add in the tomato paste and red wine and season the mixture with salt, pepper, onion powder, garlic powder and any other seasoning you'd like. Once warmed through, place the mixture into a square tin and top with the mashed cauliflower. Cook at 350 degrees for about 20 minutes, or until the cauliflower has begun to take shape. Now, just serve and enjoy!
