Start by slicing your fresh tomato and setting it aside. Take your cherry sized mozzarella balls and cut into 1/8 pieces. Now, chop up some fresh basil, mix it in with your kale and put on a plate. Place your tomato slices on top and add the mozzarella pieces. Now just drizzle with balsamic vinegar, lemon juice, and crushed red pepper. Serve immediately and enjoy!
Caprese salad's are a wonderful combination of juice ripe tomatoes with fresh mozzarella. Unfortunately, the amount of cheese that restaurants use make this a very high calorie dish. This healthy version uses much less mozzarella, with just enough to give you the wonderful flavor you're looking for. The kale base bulks it up and adds in tons of guilt free nutrients.
