Who said salad is the only thing allowed in the summer? Gazpacho is a great summer soup because it keeps you cool on those really hot days. With this easy gazpacho recipe, you'll be able to get all of those great nutrients of veggies with a wonderful flavor.
Peel, seed and chop your tomatoes and cucumber. Then, seed and chop your bell pepper and chop up your onion. Now, just place all of your chopped veggies into a blender and blend until smooth. Next, add in your garlic powder, basil, salt, pepper, lemon juice, water and white wine (optional). Blend one more time and place in the fridge overnight to let the flavors marinate. Serve cold and enjoy!
