Mashed potatoes are a wonderful side dish to accompany any meal, yet they have so many calories. To get that same comforting flavor and texture of mashed potatoes, try cauliflower mash instead. With all of the right flavors, it tastes and looks almost identical to the original!
Start by roasting a head of garlic in your oven. Cut off the top and bake at 425 degrees for about 35 minutes. Now, bring a pot of water, filled 2/3, to a boil and cook the cauliflower for 6-8 minutes, until tender. Drain, pat dry and immediately transfer back into the pot. Squeeze in half of the head of your roasted garlic and add in your spices. Using an immersion blender, blend until completely smooth. If you don't have an immersion blender, a regular blender works too. Once it's smooth, you're ready to eat! See? This is so much easier than mashed potatoes.
