Baby bellas have tons of health benefits, like being low in fat and cholesterol free. They also have several vitamins and minerals which benefit your health and help prevent disease. Stuffed baby bellas make for a great snack or appetizer and they're extremely quick and easy to make.
Preheat your oven to 350 degrees. To prepare your mushrooms, wipe the outsides off with a paper towel and take out the stems. Then, chop up the stems along with some bell pepper (preferably pre-roasted), onion and garlic. Start by sauteing the chopped onion and garlic. After about 3 minutes, add in the chopped stems and pepper. Now, add in some olive oil, balsamic vinegar, salt, pepper and onion powder. Cook for about 10 minutes and remove from heat. Fill your baby bellas with the mixture and cook for about 15-20 minutes. Serve warm and enjoy!

1/4 Green Bell Pepper (Roasted)
1/4 Yellow Bell Pepper (Roasted)
2 Tbsp Chopped Red Onion
1 Garlic Clove, Minced
1 Tsp Balsamic Vinegar
1/4 Tsp Olive Oil
*Ater sauteing mixture, cook filled bellas at 350 for 15-20 minutes
