Taco Salad is one of my family's favorite dishes but it also has so much much stuff in it. From the chips to the heavy dressing, this salad becomes really bad for you really fast. This lightened version replaces the ground beef with ground lean turkey and I made a much lighter dressing.
First, cook your ground leaner turkey. Spray a pan with Pam Olive Olive Spray and start to cook your meat. Add in the taco seasoning, cook through and set aside. Now it's time to get your dressing ready. Typical taco dressing is mayonnaise and ketchup so I used a lite mayo and unsweetened calories, which cut the calories by half! In a container, add 1/4 cup of the mayo, 1/4 cup ketchup and 1 Tsp of taco seasoning (you can get this from the store). Mix this all together and set aside. For the salad, put your romaine in a bowl and add the diced avocado and sliced cherry tomatoes. Now just add your ground turkey and dress your salad when you're ready to serve.
