Everyone's been talking about cauliflower for a reason... it's amazing! You can do just about anything with it by putting it in a food processor. If you want rice, just put it in a food processor and cook in a sauce pan with whatever seasonings you like. I love using it as a base for pizza because it's just made with cauliflower and a few other simple ingredients. Most cauliflower crust recipes call for cheese, but this one is completely dairy free!
To start making the cauliflower crust, cut up one medium sized head of cauliflower into florets, rinse and dry thoroughly. Then, place in a food processor and pulse until it reaches a consistency like fine rice (you might have to do this in batches). Place in a microwave safe bowl, cover and microwave for 4 minutes. Then, allow the cauliflower to cool completely and ring out the excess water with a dishtowel. This is very important to allow the cauliflower to cook completely and reach the correct consistency.
Next, preheat your oven to 450 degrees. Put the dried cauliflower rice into a bowl and add in the spices, whole wheat flour and olive oil and combine. Then, add in the egg and mix again until everything is completely combined and form the dough onto a Pam oil sprayed piece of parchment paper. If you are using veggies as your pizza toppings, put those into the oven first. I roasted a red bell pepper and sliced zucchini, red onion and tomato seasoned with some salt and pepper for about 10-15 minutes on a Pam sprayed baking sheet.
Next, take out the roasted veggies and put in the cauliflower crust for about 15-20 minutes. Then, put on sauce of choice, if using, your roasted veggies, fresh basil and whatever cheese you want. I didn't use any sauce and used dairy free Daiya Pepper-Jack cheese. Place back into the oven and cook for about 5 more minutes, or until cheese is melted.
