There's nothing better than a nice refreshing salad in the hot summer months. Remember, having a salad doesn't have to be boring! There are so many different proteins, fruits and veggies you can add to make your salad unique each time. This salad is made up of salmon, avocado and grapefruit. How much more of a refreshing super salad could you ask for?
To start off, bake two 3 ounce pieces of salmon, seasoned with salt and pepper, in a 425 degree oven for 20-25 minutes. Take this time to prepare your salad. Prepare your spring mix in a bowl and add in one sliced avocado and one sliced grapefruit. Once the salmon is ready, cut up into bite sized pieces and add to the salad. Drizzle with some balsamic vinaigrette and season with salt and pepper. All that's left is to plate and enjoy!
