Chicken lettuce wraps make for a great low calorie option for a weeknight family meal or even to make for your friends when they come over for lunch. These also make adorable appetizers when you use smaller pieces of lettuce. Whatever your reason, this healthy dish will leave you happy and satisfied with zero regrets!
Start by making the shredded chicken (See my post on How to Make Shredded Chicken). Once the chicken is cooked and shredded, place it in a Zip Lock bag and add Low Sodium Soy Sauce and Teriyaki Sauce. Season to taste with salt and pepper. Feel free to spice it up with some cayenne or crushed red pepper. Leave in the fridge to marinate for 1 hour, or up to a day. I make enough for the week so I just put it all in one Zip Lock bag.
Ready to eat? Great! Just chop up your veggies (if you don't prep beforehand) and wash your choice of lettuce. Put the lettuce wraps on a plate and fill each one with the shredded chicken. Top with pepper, onion, sprouts and water chestnuts and anything else you like. Now just serve and enjoy!
