Slow cooker meals are such a great way to cook your meals for the week on a lazy Sunday afternoon, or even during the week. I do all of my meal prep over the weekend and my Crock-Pot is a great option way to get my cooking done while finishing up any errands, or even just to have time to relax and watch some TV. If you love garlic, you have to try this recipe. The garlic mellows out and it just leaves the chicken with a great fresh taste.
Prep all of the garlic by peeling it and put it to the side. Leave in large pieces so you can easily scoop them out if you wish. You can use the leftover garlic in other dishes, like mashed potatoes. In a bowl, combine 1/3 cup low sodium chicken broth, 2 Tbsp Cognac and 1/4 cup dry white wine (I used Chardonnay). Next, season the chicken with salt and pepper. Dice the chicken and sear it in a pan sprayed with olive oil for about 5 minutes total. Transfer the chicken to the Crock-Pot and add more olive oil spray to the pan. Chop up some onion and pepper and add to the chicken in the crockpot. Next, cook the garlic in the same pan with the drippings from the chicken. Cook until brown, about 1-2 minutes. Next, stir in the chicken broth mixture and boil for 2 minutes. Pour the broth over the chicken in the crockpot, sprinkle in the Thyme and let it cook on Low for 5 hours. Remember, you can always add more salt at the end. Serve with some of the broth and eat over rice, zoodles, or just by itself!

4 Heads of Garlic

2 Tsp Thyme
