Love fried rice but hate the calories? Give Cauliflower Fried Rice a try! You can eat more of what you love, but without the guilt. Use this as your base for whatever type of fried rice you love to make.
Start by boiling the chicken breasts. Once cooked through, use two forks to pull apart the chicken (don't use your hands unless the chicken has cooled). You can also use cubed chicken, tofu, salmon, anything works! Season with some salt and pepper and set aside.
To make the cauliflower rice, cut up 1 head of cauliflower and pulse using a food processor until the cauliflower is "riced." For less of a mess (trust me, it's messy) you can simply buy riced cauliflower from your local grocery store - check the frozen aisle!
Head up the stir-fry pan on medium-high and spray some olive oil. Chop up some red bell pepper and yellow onion. In a large stir-fry pan, add in the onion, pepper, and minced garlic. Once cooked down, add the cauliflower rice and stir in the beaten eggs, making sure not to accidentally make scrambled eggs! To do so, move the cauliflower mixture over in the pan and add the eggs - immediately begin to stir the beaten eggs into the cauliflower mix. Add in the pulled chicken and season with salt and pepper. Lastly, stir in a bag of defrosted peas and some soy sauce. Season to your liking, adding any onion powder, Sriracha, etc. Serve hot!
