Brussels sprouts and quinoa go great together and make a very refreshing side dish to any meal. With an Orange Juice Vinaigrette and craisins, this fruity side dish is a great addition to your next family get together. Try it at a B.B.Q. or just for lunch, it really goes with everything!
Start by cooking your quinoa according to the package instructions and place it in the fridge to cool. Now you can work on your dressing! Just put 1/2 Cup of Orange Juice, 2 Tbsp of Olive Oil, 2 Tbsp of Apple Cider Vinegar and some salt and pepper in a container. Cover and shake and voila! Set aside until you have all of your other ingredients together. In a bowl, add your shaved brussels sprouts, radicchio, sliced jicama, slivered almonds and craisins. Now, just mix in your quinoa and add the OJ Vinaigrette. Let it marinate overnight and you'll have a refreshing side dish ready to go!

Salad:
3/4 Cup Tricolor Quinoa
4 Cups Shaved Brussels Sprouts
1 Cup Shredded Radicchio
1/2 Jicama, Sliced
1/3 Cup Craisins
1/4 Cup Slivered Almonds
OJ Vinaigrette:
1/2 Cup Orange Juice
2 Tbsp Olive Oil
2 Tbsp Apple Cider Vineger
Salt and Pepper to Taste
