Grilling is probably my favorite preparation for pretty much anything. From veggies to chicken and fruit, grilling is a great and healthy way to enjoy your favorite foods. Summer is the best time to enjoy grilling and eating outdoors. If you're new to grilling, these chicken skewers are a great way to get started! They hold up really well on the grill and the leftovers are always just as good!
Buy 2 pounds of boneless, skinless chicken (breast or thighs). Before grilling, the chicken needs to be marinated. Chicken doesn't need a lot of time to marinade so this only needs to be done about 30 minutes to an hour prior to cooking. Dice up your chicken and season with salt, pepper, onion powder and garlic powder. Feel free to add any other spices you like, such as paprika or cayenne pepper. Put the diced chicken in a plastic Ziploc bag and add Low Sodium Soy Sauce and Teriyaki Sauce. While the chicken is marinating, prep your veggies. Cut your veggies of choice into large enough pieces to fit on a skewer, about the same width as the diced chicken. I used pepper and onion but zucchini, mushrooms and pineapple are also great options. Get creative!
Skewer time! It's important to remember to soak the skewers in water for about an hour before you grill. Preheat the grill so it's ready when the skewers are assembled. Alternate between the vegetables and chicken on each skewer and you're ready to grill! Grill over medium heat and cook for about 10 minutes, turning the chicken halfway through. Once your chicken is cooked through, eat and enjoy!
